BANANA OAT MUFFINS

This is as clean as baking can get. Only four base ingredients and any add-ons of your choice to make these healthy, holistic muffins.

They are great as pre-workout or post-workout snacks, and to enjoy at any time of the day really.

What I love about this banana oat batter recipe is that you can twitch it and make pancakes with it, too!

 

Ingredients: (makes 12 muffins)

  • 1 cup greek yogurt
  • 2 ripe banans
  • 2 cups of oats
  • 2 eggs
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • vanilla extract
  • ⅓ cup of soy milk
  • pinch of salt
  • stevia
  • add-ons of choice (flaxseed, dried cranberries, nuts)

Pre-heat oven to 400˚F.  Blend all ingredients. Place batter in muffin cups. Pop muffin tray in oven to bake for 15 minutes.

 

FOR BANANA OAT PANCAKES:

Ingredients:

  • 2 eggs
  • 1 medium ripe banana
  • ⅓ cup oats
  • cinnamon
  • stevia
  • flaxseed
  • vanilla extract

Blend all. Pour batter on hot skillet to cook.
