CAULIFLOWER MASH (Just two ingredients!):
Yes, you read right: JUST – TWO – INGREDIENTS.
What is so perfect about this side dish? It is low-carb and is just as creamy and satisfying as starchy potato mash. All you need is cauliflower and organic butter (or olive oil for those of you who don’t eat dairy).
- Butter (substitute with olive oil for dairy-free diets)
- Salt to taste
Cook the cauliflower for 12-15 minutes or until very tender. Drain and discard all of the water and place in a blender with the butter and salt. Blend until it looks like “mashed potatoes”. Top with chives.
