CURRY CHICKEN SALAD

Ingredients:

 

  • cooked chicken breast
  • celery
  • light mayonnaise
  • extra virgin olive oil
  • sea salt
  • pepper
  • ground mustard
  • curry powder
  • optional: walnuts, raisins

Directions: Shred cooked chicken breast, chop celery into small bits and place in mixing bowl. Massage olive oil, light mayo, sea salt and spices to incorporate all ingredients and add walnuts and raisins for garnish. Serve over kale salad, in lettuce or collard green wraps, in a whole wheat sandwich or by itself!
