Not everybody does well with gluten. Even if you don’t have celiac disease, gluten can make shedding pounds an arduous task, and it can stall weight loss and regular digestion for many.
I am offering an alternative to delicious pancakes only this recipes is made of coconut flour. Enjoy!
1/4 cup coconut flour
1/8 tsp baking soda
pinch of salt
1/4 cup milk (of your choice – cow’s or nut)
2 tbsp coconut oil
1/2 tbsp honey
1/2 tbsp vanilla extract
Thoroughly mix the ingredients in a medium bowl until smooth. Melt a dab of butter or use cooking spray to cover skillet and pour batter to cook. Remember that you won’t see many bubbles forming on the top, so carefully check the underside of your pancake before flipping. Serve right away, bon appétit!
