PALEO BANANA MUFFINS

Grain-free, dairy-free, sugar-free muffins!

Ingredients:

  • 1/3 cup coconut flour (40g)
  • 3/4 tsp baking soda
  • 3/4 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/3 cup almond butter
  • 1/4 tsp salt
  • 3-4 ripe bananas, mashed (400g)
  • 3 tbsp coconut oil
  • 1 tsp vanilla extract
  • 3 eggs
  • optional: walnuts to top

Directions: Pre-heat oven to 350 degrees F. Spray muffin pan with cooking spray and set aside or use muffin baking cups. Blend all ingredients and pour mixture in muffin tin, top with walnuts. Bake for 20 minutes or until knife comes out clean. Let cool for 15 min.
