I love this recipe because it is a great option to get all the veggie benefits and nutrients of the day, plus I love warm dishes (it must be the Vata in me). Every week, you can go to the grocery store and buy all the veggies you love and just boil them down and blend them into nutritious soups for the whole week.
So here’s today’s recipe:
- 5 carrots
- 2 zucchinis
- 3 chard leaves
- 1 small garlic clove
- 1 tbsp almond butter
- curry powder, season to taste
Bring water to simmer in a pot and boil the garlic, carrots, zucchinis and chard until soft. Place veggies and garlic in a blender with some of the water they boiled in, add almond butter and the seasoning powders and blend all for 2 0 3 minutes. Serve.
