CARROT BANANA MUFFINS

Vegan, sugar-free, gluten-free and all natural… You can make the muffins or a loaf from the same batter…

Ingredients

  • 2 ripe bananas
  • 2 shredded carrots
  • 1/3 cup coconut oil
  • 1/4 cup nut milk of choice
  • 1/2 tsp cinnamon
  • 2 tbsp chia gel
  • 1/2 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 tsp pink salt
  • 1/2 tsp baking soda
  • 1 3/4 cup oat flour (blended oats)
  • walnuts for topping

Mix all until you get a gooey batter and pour batter in mold. For loaf, bake at 375ยบ F for 50 min approx. For muffins, it can range from 30-40 minutes.. baking time depend on city altitude, oven brand, etc, so just poke with toothpick until it comes out clean. Enjoy!
