👩🏻‍🍳 VEGAN POLENTA 💛 I made a savory breakfast this morning, even though this could be served for lunch or dinner as well. Polenta is a northern Italian dish and it is basically boiled cornmeal and, my dear friends, it is soooooo creamy and good. A high fiber dish that I added tofu strips and broccoli to for the protein content. YUM!

Blend pre-cooked tubed polenta with nut milk of choice and cook it in hot skillet with a drizzle of olive oil and a pinch of pink salt. Stir until creamy and well incorporated. Serve with veggies of choice or even with fruit and nuts for a sweet breakfast option.


Hoy hice polenta con tofu y brócoli. La polenta es un platillo del norte de Italia y es básicamente harina de maiz hervida en agua o consomé. Para mi polenta vegana agregué aceite de olivo y un chorrito de leche de almendra (normalmente la preparan con leche de vaca y mantequilla)…no saben que exquisitez.
